2005 CABERNET MERLOT
Introduction
A classic blend of Cabernet Sauvignon, Merlot and Cabernet Franc produced from estate grown fruit. The vines are hand pruned, the grapes hand picked and the wines hand crafted with the attention that only a small, dedicated producer can provide. No pesticides are used and no systemic chemicals are used on our vines. At harvest the fruit is hand picked into small picking baskets and immediately processed in our winery in a basket press. The red wines are fermented in small one tonne open fermenters where they are hand plunged until dryness. The wine is then racked to French oak barriques, where malo-lactic fermentation is induced. The red wines are matured in these French oak barriques for 18 to 22 months. The wines are racked 4 times during this maturation period and are only given a light filtration prior to bottling. Throughout these processes the wines are moved from vessel to vessel gently via gravity feed. Pumps are only used at bottling stage.
Tasting notes
Medium to dark red in colour. An aroma of dark berries, plum, cloves and subtle mixed spices and violets.
On the palate it is a complex blend of red and black forest fruits. A lingering mouthfeel of velvety fine tannins intermingled with fruits and spice. A perfect accompaniment to red salsas, risotto ai funghi or slow cooked stews.
Vintage comments
2005 was the perfect vintage at Mount Cathedral Vineyards! A rain and sun drenched spring established a beautiful canopy and set the stage for a gloriously consistent warm to hot summer punctuated by our usual cool to cold nights. This facilitated the production of fruit rich in varietal character whilst still retaining high levels of natural acidity. A dream for the non-interventionist winemakers!
