2005 CHARDONNAY

Introduction
A unique Chardonnay made in the traditional Bugundian fashion but being closer to Chablis in wine profile. In the case of our Chardonnay, the fruit is whole bunch pressed and barrel fermented. The Chardonnay is matured in the highest quality French oak where it is lees stirred and partly put through malo-lactic fermentation. After 12 months the wine is stabilised, filtered and bottled. High natural acidity and gentle processing techniques lead to the production of wines which retain their gentle stone fruit qualities.

Tasting notes
Pale gold in colour. Pear, peaches and honey with underlying gentle spice of vanilla and cinnamon oak characteristics.

Palate:
Nectarine and melon fruit with a crisp and lengthy citrus fruit acidity on the finish. Great length provided by natural acids and softly textured oak tannins. Wonderful with butter seared scallops or oven roasted salmon.

Vintage comments
2005 was the perfect vintage at Mount Cathedral Vineyards! A rain and sun drenched spring established a beautiful canopy and set the stage for a gloriously consistent warm to hot summer punctuated by our usual cool to cold nights. This facilitated the production of fruit rich in varietal character whilst still retaining high levels of natural acidity. A dream for the non-interventionist winemakers!
